Why this works

A low-carb tortilla pressed into a dish turns into a crisp, golden crust. Fill it with eggs and cottage cheese, scatter over spinach and tomato, top it with mozzarella, and bake. You get something between a quiche and a breakfast pizza, with over 40g of protein in the whole dish.

Slice it like a pizza and eat it warm. It's filling enough for one big breakfast or two smaller ones.

Method

  1. 01
Heat the oven to 350°F (175°C).
  2. 02
Press the tortilla flat into a shallow, round oven-safe dish or pie pan so the edges curve slightly up the sides.
  3. 03
Crack the eggs straight onto the tortilla. Add the cottage cheese, salt and black pepper, then whisk everything together with a fork until combined across the base.
  4. 04
Scatter the diced tomatoes and spinach evenly over the egg mixture.
  5. 05
Spread the mozzarella over the top and finish with a pinch of black pepper and any herbs you like.
  6. 06
Bake for 20 to 25 minutes.
  7. 07
Give the dish a gentle shake. The center should be set and firm, not watery or loose. Slice like a pizza and serve warm.
Good to know
1

Check your tortilla label. Low-carb tortillas vary a lot, so pick one with mostly fiber and very few carbs to keep it keto.

2

Whisk the eggs gently on the tortilla with a fork so you don't tear the base.

3

Pat the diced tomatoes dry first. Less juice means a firmer, less watery center.

4

Whole milk cottage cheese gives a creamier, richer filling than low-fat.

5

Swap the vegetables freely: mushrooms, peppers or chopped kale all work.

Questions

Before you start

Will the tortilla go soggy?

No. The edges crisp up in the oven, and the base sets with the egg like a quiche crust. Draining the tomatoes helps keep it firm.

Can I skip the cottage cheese?

Yes, but it adds creaminess and extra protein. Ricotta or a splash of cream are good swaps.

How do I know it's done?

Shake the dish gently. If the center is firm and doesn't wobble like liquid, it's ready.
