Why this works

These tacos skip the tortilla. The shell is cottage cheese and egg white, beaten with a pinch of red pepper flakes and baked flat until golden and crisp at the edges. Fill it with sliced avocado, a sunny-side-up egg, a drizzle of chili oil and fresh chives, and breakfast is done.

Cottage cheese and egg white batter spread into two rounds on a parchment-lined baking sheet.

The shells bake on their own while you fry the eggs, so it works on a busy morning or a slow weekend brunch.

Good to know
1

Don't skip the parchment paper. The shells are cheese and egg, so they need it underneath to lift cleanly off the tray.

2

Give the shells a few minutes to cool before filling. They firm up as they cool and fold more easily.

3

Fry the eggs while the shells are in the oven, so everything is ready at the same time.

4

No chili oil? A drizzle of sriracha or your favorite hot sauce works too.
