Why this works

The trick in these wraps is the hard-boiled eggs. Blended with raw eggs, they make a batter that sets into a thin, bendy wrap instead of a rubbery omelet. Make two at a time and keep them in the fridge for lunch.

Method

  1. 01
Blend the raw eggs, hard-boiled eggs, herbs and salt until completely smooth, with no lumps.
  2. 02
Heat an 8-inch nonstick or crepe pan over medium-low heat and add the oil.
  3. 03
When the oil is hot, pour in half the mixture and tilt the pan so it spreads into a large, thin round.
  4. 04
Leave it to set for 3 to 4 minutes, until cooked through. Don't flip it. Slide it onto a plate to cool.
  5. 05
Repeat with the rest of the mixture.

Good to know
1

Filling them: drizzle on your dressing rather than spreading it, which can tear the wrap. Add lettuce and your fillings and roll it up like a burrito.

2

Storage: keep them in an airtight container in the fridge for up to 3 days.
