Why this works

These are what happens when a frittata meets a biscuit. Eggs, cottage cheese, spinach and sun-dried tomato get folded together with almond and coconut flour, scooped onto a tray, topped with mozzarella and baked until golden. They're cheesy, soft in the middle, and hold together well enough to eat with one hand on your way out the door.

Method

  1. 01
Heat the oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper.
  2. 02
Heat the olive oil in a large skillet over medium heat. Add the onion and sauté for 2 minutes.
  3. 03
Add the spinach and garlic and cook for about 1 minute, just until the spinach wilts. Move it to a paper-towel-lined plate to drain.
  4. 04
In a large bowl, mix the eggs, spinach mixture, sun-dried tomatoes and cottage cheese until combined.
  5. 05
Add the almond flour, coconut flour, baking powder, salt, pepper, mozzarella and parmesan. Stir until everything comes together into a thick batter.
  6. 06
Scoop about ¼ cup of batter per biscuit onto the baking sheet. Press each one down gently and top with a little more mozzarella.
  7. 07
Bake for 22 to 25 minutes, until golden brown on top.
Good to know
1

Keto swap: some sun-dried tomatoes are packed with added sugar. Check the label and pick dry-packed or plain oil-packed ones.

2

Drain the spinach well. Extra water makes the biscuits soggy in the middle.

3

Let the batter sit for 2 to 3 minutes before scooping. The coconut flour soaks up liquid and the batter firms up.

4

Storage: keep in the fridge for up to 5 days. Reheat for 20 to 30 seconds in the microwave or a few minutes in a hot oven.

5

To freeze, cool completely, freeze on a tray, then bag them. Reheat straight from frozen.

Questions

Before you start

Can I use only almond flour?

You can, but use about 1 cup almond flour in total. Coconut flour soaks up a lot more moisture, so it can't be swapped one to one.

Can I skip the cottage cheese?

Yes. Ricotta works the same way. Cottage cheese adds moisture and extra protein, so the biscuits are a little drier without it.

Why are my biscuits flat?

The batter was probably too wet. Drain the spinach and tomatoes well, and give the batter a few minutes to thicken before scooping.
